You know those days when you literally cannot catch a break? You have a million things going on and on top of it all you’re expected to feed your toddler too. I mean, when is she gonna start pulling her own weight around here? She’ll be two soon, do you think I can enroll her in a cooking class yet?
In all seriousness, being a full-time working mom is tough. Since I work from home, I’m also the person responsible for making sure she’s eating her meals (and all the snacks too). So for those days that lunch just sneaks up on me, I came up with an easy lunch go-to. The best part is it only takes a few ingredients AND my toddler loves them. Mom win for sure.
Insert Buffalo Chicken Deviled Eggs here. They’re seriously so good (and for more than just toddlers). These things fancy themselves up enough to serve at a dinner party or Sunday brunch. Your friends and family will definitely be impressed with this new recipe (and since we all know we have no real time to impress, this is the perfect solution).
This recipe calls for 12 hard boiled eggs and will serve a small dinner party. I used Great Day Farms Hard Boiled Eggs because I love that they’re high in protein, super convenient (they come in a 2 pack or 6 pack) and are sold at Walmart. Start by opening the package and cutting the top 1/3 off the top. Toss the yolks (or save them for another recipe if you have one!). There’s a few ways you can go from here… I used a rotisserie chicken, but you can cook/shred your own chicken breast or use a can of chicken as well. Make sure it’s well shredded, mix it with 1/4 cup of mayo, 1/4 cup of buffalo wing sauce (I used mild so my toddler didn’t have any excuses not to eat them!). Sprinkle in some salt/pepper to taste, and stuff shells with mixture. Garnish with chives if you like them!
